Pawan Shahri and Dhaval Udeshi, Managing Partners at London Taxi and Butterfly high are planning to expand their restaurants in 2021.

Resurrect from the impact of Covid-19 with no nails in their coffin, currently handling an investment cap of 15cr, Pawan and Dhaval look forward to increasing the number to approx 40cr++ by the end of 2021.

“We see the hospitality business as a long-term business gain where we need to keep increasing our market share in the casual dining & bar segment. Post lockdown, we have seen the market conditions in terms of financials becoming more feasible. We could convert many fixed costs into variables which was a big win for us,” said Pawan Shahri who is now working on increasing footfall and average spend per cover.

Though they saw a dip in their customers per month and in the Average Person Cost post-lockdown, they are strongly getting back to 3000+ customers per month per outlet and seeing a rise in APC to about 1400+ Taxes.

Innovation for growth

During and post lockdown when people were awfully scared to step outside and enjoy their favorite foods, these restaurateurs came up with concepts which would enable customers to be in their safe zones and yet be able to enjoy the delicacies. Pawan introduced Bro-eat, the first Whatsapp based community home-delivery platform to help restaurants across India reduce their dependency on aggregators to increase their delivery business.

They also conceptualized London Taxi as a Drive-thru station, where you could place your order prior to reaching and relish your food in your perfectly sanitized car with aid from the café staff.

“Post-lockdown, having adapted to the current situation quickly was one of our biggest wins. We soon understood the market conditions and learnt to adapt to the scenario,” added Dhaval Udeshi who strongly feel the demand for home-grown and quality brands will increase further as the dining-out experiences is something that people will look forward to.

They are also looking at expanding their team strength to 650 people and corporate positions by end of 2022.

With over 10 years of experience in the hospitality sector, Pawan Shahri is known for his aptitude to provide bespoke experiences and concepts to this industry. On the other hand Dhaval Udeshi was just a young 20 year old boy when he began his lifelong journey as a food-storyteller and a restaurateur.
