As the whole new trend of ‘Eat Clean’ is in vogue, no wonder restaurants across the world are tweaking their menu according to it. Chefs are introducing dishes which are healthy, tasty and filling at the same time. Use of ingredients like ragi, millet and quinoa are making their spaces in the menu today.
Recently for example, Taj Vivanta in Surajkund introduced an innovative menu called ‘Every Day A New Day’ which offers unique and healthy recipes to cater to the fitness conscious millennials, who are scouting for healthy eating options. Interestingly, the menu has been curated by millennial chefs, who are better at understanding the taste and preferences of the younger generation.
The millennial chefs, Geetika Gupta and Prashant Banerjee, are bringing forgotten grains back to life by experimenting with ingredients and recipes to provide a meaningful and healthy food experience. The dishes are rich in protein, fiber and are planet-friendly. For instance, they are serving Dosa made of Ragi and dessert out of beetroot. The chefs have re-engineered and reinvented traditional techniques of cooking- that resonate with the “In-house everything” trend and presenting, “Farm to Table concept” by using primeval ingredients.
Commenting on the new designed menu, Jr. Sous Chef Executives- Geetika Gupta and Prashant Banerjee said, “Arousing a sense of nostalgia, the new menu brings forth the essence of organic flavours through the usage of soul ingredients that provide nutritious value to the dish. The new menu is specially curated to suit the healthy preferences of millennials.”
This thoughtfully curated menu carries forward centuries-old healthy ingredients, including amaranth, millets, oats, ragi and quinoa. It has some signarture dishes like roasted lamb and bulgur kebabs with walnut chutney and rocket leaves salad, Kado millet chicken burger, Amaranth cupcakes with almond milk reduction and seasonal fresh fruit mélange, and Apple infused crème Brulee with barley granola.
